In modern brewing history, flavoring beer with fruit has been predominantly the domain of Belgian brewers. Within the basin of Zenne river, people have been fermenting their brew with unique blend of wild yeast, which thrives in surrounding environment. The result was very sour beer, so they secondary fermented it or blended it with fruits or fruit juice to make the taste more appealing.Cassis is the Walloon term for black currant, which we added in extensive amounts for secondary fermentation of our belgian Saison. The outcome is a beer with fascinating dark ruby color and rich, pink head. With first sniff you can immediately identify the presence of black currants. They give our beer slightly acidic, tart, refreshing taste and are source of big doses of Vitamin C, E and polyphenols, reducing the risk of heart diseases, cancer and infection. The Slovak term for “cheers” (“na zdravie” – literally “for health”) is more then appropriate.
