Scotch Ale, also known as Wee Heavy, is the strongest beer style originating in Scotland. In contrast to light Scottish Ales, it is brewed for much longer, allowing caramelisation of wort in the boil kettle. As a result the beer is richer in taste, bolder in color, and thanks to the evaporation of water, stronger. Besides the traditional long boil, we submitted our Scotch Ale to special procedure called Wood Aging. In this technique, pieces of used barrels from wine, liquor or wood chips are added to the tank with beer, carrying over the original flavor. We used mead-soaked oak wood and created a truly unique brew with a dark mahogany color, an aroma of mead from a barrique barrel and the taste of fire-roasted spiced apples with vanilla. Its gentle bitterness reminds of strong black tea with honey.
