In modern brewing history, flavoring beer with fruit is domain of mainly Belgian brewers. Around the tributary of Zenne river they have been fermenting their brew with unique blend of wild yeast, which thrives in surrounding environment. The result was very sour beer, so they secondary fermented it or blended it with fruit or fruit juice to make the taste more appealing. However, flavoring with fresh fruit perfectly complements other styles too, such as the Walloonian Saison. Its special kind of yeast produces flavors of ripe pomes on its own, but we added plums and juniper berries to enhance the spirit of Autumn. Fermentation of such a wort creates the same aromatic substances as leaven for distillation of Slivovitz. The result is therefore a bright beer with delicate fruit aroma, reminiscenting the taste of local plum brandy – Slivovitz, with dry, slightly bitter finish with a hint of juniper.
