In the colonial era, the term India Pale Ale referred to an English beer intended for export to India, nowadays its abbreviation IPA simply refers to a medium – strength pale ale with hopforward balance. Malt is only supportive, like a clean canvas on which modern hop varieties can shine through. One of them is the Mosaic hop, which truly lives up to its name and, depending on the growing conditions and usage, offers a colorful kaleidoscope of flavors. In our IPA it shows tropical fruits, namely mango and pineapple, while the flavor transitions to a dry, slightly bitter white peach that lingers on the tongue and invites you to take another sip.
