Oud Bruin (Old Brown), also known as Flanders Brown, is the Dutch name of an ancient beer style originating from the Flemish region of Belgium characterised by its long ageing process taking up to one year. It undergoes a secondary fermentation, which takes several weeks to a month, and is followed by bottle ageing for several more months. This prolonged maturing allows residual yeast and bacteria to develop flavours unique to this style. Often, wooden barrels are used in the first ageing phase, delivering a tender woody bouquet to the beer while the porous structure of the wood acts as the perfect niche to the microorganisms. Specifically popular is to ageing such beer in the barrels previously used for whisky, bourbon or wine, all granting the beer an extra flavour and aroma. We have brewed — and fermented by noble abbey yeast from Westmalle — a strong Belgian beer of a caramel colour and taste. Afterwards, we aged it for five months in a French Oak Barrel from a local Château Topoľčianky Winery, previously used for aging their gold medal winner Red Wine. The result? A deeply fermented, almost dry premium Belgian beer, whose taste is a gorgeous combination of all factors entering the ageing process.
