Roots of Witbier reach as far back as 14th century’s Belgium and Netherlands. Back then, the beer was brewed with locally available ingredients, thus making it unique to each individual region. In the monasteries in a town of Leuven, east of Brussels, barley, wheat and oats were used and instead of yet unknown hops a mixture of herbs and spices called gruit would act as a counterbalance for the malty body. Our Witbier contains it all, yet for Rosé we also added our local ingredient – elderberries. Beer thus gained an inimitable pinky – violet color and a delicate raspberry-like flavor. In addition, elderberries are known for many medicinal effects: they are loaded with vitamins C, A and B, supply the organism with antioxidants, prevent the deposition of fat in the blood vessels, help to fight viruses and work against arthritis and constipation. Our Rosé is therefore the modern equivalent of a medieval medicinal drink.
