Liberty Ale, released in 1975 in San Francisco’s Anchor Brewing, is considered to be the first modern, post-prohibition American IPA. This vvery original craft beer featured new hop variety Cascade and sparked the craft beer revolution. American brewers started to push the envelope with beer bitterness and strength further and further, using mainly American or New-World (Australia, New Zealand) hops with citrusy, floral, resinous, piny, tropical or other fruity flavor and aroma. The beer revolution has benefited greatly from new hop varietes with previously unrecognized taste and conversely, demand for new hops began to grow. The best place to farm these new hops were fertile valleys under the snowy summits of the Cascade Mountains in the Washington state. In the Nineties, they yield a new hop called Summit – fitting name, considering its location as well as extremely high bitterness. These exclusively hand-harvested hops lends our beer an unmistakable character of grapefruit and orange peel, which is manifested thoroughly from pungent aroma to juicy, bitter finish.
